MORPHOLOGICAL COMPOSITION AND ORGANOLEPTIC QUALITY OF MEAT OF YAKUT BREED FOALS

Abstract

The article shows the results of a comprehensive quality evaluation of meat Yakut breed foals. In this research was foal that colt meat is a product of high biological and nutritional value, characterized by a low calorie, high protein content, optimal amino acid and fatty acid composition. Based on the analysis and generalization of complex investigations, the optimal slaughter age was set to increase the morphological composition of carcasses and to get meat foal with the highest level of consumer properties.
