Access to adequate amounts of safe and nutritious food is essential for maintaining human life and health. Unsafe products, especially of animal origin, containing pathogens are the cause of many diseases that harm human health and affect the social state of society. Food safety is closely related to food safety, and the development and implementation of a system of control measures is an important task for any state. The article attempts to study the basic principles of building such a system at the first stages of its formation.
